So I believe talent is unchangeable in that it’s fixed when they enter the youth school. However, a higher youth coach means that junior improves faster and comes out at a higher level and with more higher skills.

Basically the true talent is fixed, the estimated talent most refer to isn’t.

Juniors talent is already established once they get in
Better trainers get to estimate junior talent and level close to reality
If i play junior matches my coach has more chance to get talent and level estimation
Estimation is junior level is +/- 2.5 with magical and should be bigger with worst coach
Junior level and talent is really established when they join and train in main team

I don't think it matters if you win by walkover. The coach estimation is done during the training sessions in preparation for the match ahead, and not during the match itself. That's how it should be at least.

Otherwise, if you have 20 youngsters, and only 11 can play, those who didn't play don't get the same estimation as the rest who played? Wouldn't make sense.

Kind of. The best way to explain it is to think of it as Potential Talent

So a player has a talent of 3, but it's only with an Unearthly coach that you'll get 100% of that talent.
The potential talent is the same
The actual talent depends on the junior coach

The estimation is debateable but yes, better coaches get better estimation
